This isn't handled at all. I think I'm currently just assuming that inputs are in potential temperature. This should be added as a flag to .ocean_forcing and then make a conversion where necessary

I think it might also be possible to simply tell MOM6 to read inputs as either P or C temp? This could also be a solution
