This is probably just basic Windows troubleshooting, rather than a problem with the software (which is incredibly useful). I've used FileMeta to successfully add tags to mkv, png and webm files with no problems. With mp3 files, it gives me the new input box, but when I add tags and hit "OK" it gives me the following:
"You'll need to provide administrator permission to apply properties to this file"
[I click "Continue" with the admin shield icon] "You need permission to perform this action. You require permission from [Myself] to make changes to this folder"
[from here it only gives me "Try again" and "Cancel"]
My account has full permissions ("Administrator"). In the Security tab it only lacks the greyed-out "Special Permissions" (which I assume is not relevant?). Disabling inheritance did nothing. I tried it on the other Admin account on the PC - same thing. I also manually gave myself full control over the folder and mp3 files themselves - no effect.
What's going on here? I'm baffled by this.

I see exactly the same thing on my machine. It is to do with the fact that Windows insists on using its own property handler for .mp3, so that File Meta can only modify the profile. I am investigating further.
I am still working on this. I have been rerunning the test suite I used by to validate which properties are settable on which file types, and have started running into issues which will require more digging in to to discover the root causes.
