add to conda forge

Hi @nstarman can unxt be added to conda forge? It looks like this would also require adding a few of the dependencies of this package.

I'm happy to help with some of the maintenance load, but it's fairly straightforward.

Hi @ColmTalbot. Adding unxt to conda Is certainly in scope but for me is a low priority until v1 is released (a few months).
As you say, getting this on conda will require getting the dependencies on conda as well. None of them except JAX have C code, but since JAX is on conda that's fine and the rest can be pip installed in conda without side-effects, even if that's somewhat counter to the conda ethos.
That being said, I'd be happy to review PRs.
