Point to the Latest Release of librephotos-docker in Documentation #1498

Describe the enhancement you'd like
Update the LibrePhotos installation documentation to point explicitly to the latest stable release of librephotos-docker. This change should include:

Linking to the releases/latest page in the repository.
Clearly advising users to use a tested release rather than master or potentially unstable development branches.

Describe why this will benefit the LibrePhotos
A recent development change has caused installation failures when following the current instructions. Users encounter errors like A service cannot depend on itself: db during docker-compose up -d. This issue appears to stem from using an unstable version of librephotos-docker. #1497
