Is your feature request related to a problem? Please describe.
It seems appropriate to update our Unity version to reflect the latest LTS of Unity.

Describe the solution you'd like
Upgrade the project to Unity 6 with consistent packages. Remove any unwanted dependencies and ensure installation of plugin is as simple as possible.

Additional context
Might be worth considering adding assembly definitions and namespaces where possible.
