Add Support for trn2.48xlarge in EKS AMI and RAID Setup

PR #2057 adds trn2.48xlarge to eni max pods. What kind of support are you looking for on storage? setup-local-disks should handle the NVMe instance stores

Thanks @ndbaker1 , this is perfect.

I wasn't sure if there was any dependency to using the RAID setup script so wanted to mention it to be safe. I will test it out on our current image as we are already using a manual hack fro the max pods settings update
