Barbecue sauce

Bring to a boil, and simmer for 15 minutes:

  • 240 grams (~1 cups) ketchup
  • 120 grams (~1/2 cup) water
  • 60 grams (~1/4 cup) Worcestershire sauce
  • 30 grams (~2 tablespoons) apple cider vinegar
  • 30 grams (~2 tablespoons) whiskey
  • 30 grams (~2 tablespoons) sugar
    • 60 grams (~4 tablespoons) for pork and poultry
  • 50 grams (~2 tablespoons) molasses
  • 2 grams (~1 teaspoon) ground black pepper
  • 1 teaspoon mustard powder
  • 1.5 teaspoon ancho chile powder
