Unclear epidemic channel plot on CRAN page #146

When reading the Building an Endemic Channel with epiCo vignette (epidemic_channel.Rmd) the second figure appears very small and the plot is unclear. This only happens on the CRAN version of the vignette and not on the {epiCo} pkgdown site.
