[Diagnostics] Plain-text live view of some fields

Is your feature request related to a problem? Please describe

I don't always want graphs of some fields (boolean, text status, etc) but seeing their status for diagnostics would be incredibly useful

Describe the solution you'd like

The ability to add "table"s or even just a live readout for some status fields would be super useful for debugging some fields like "dual_carriage.carriage_[01]" or "printer.toolhead.extruder".

Describe alternatives you've considered

Currently I just have a super simple tui script that lets me get a live view of fields

I already discussed this with @pedrolamas but I figured it would be useful to create a FR to track it
