We pinned the pymc dependency to >=5.0,<=5.8.2 due to #159. Once the underlying issue is resolved, we should unpin the version.

Seems to be a reticulate problem. There's now also an issue on the reticulate repo: rstudio/reticulate#1508

The issue was fixed upstream in pytensor: pymc-devs/pytensor@353c734

With the next release, we should be able to unpin.
