Incorporating the comments from metanorma/mn-samples-plateau#278, enhance lutaml_ea_xmi to support multiple XMI files.

In this task we want to be able to define a shorthand and paths to multiple EA XMI models, then reuse those defined models inside lutaml_ea_* commands.
