Easy, and makes for a very tender and flavorful chicken that doesn't require extra liquid.
- 4-6 lb roasting chicken
- 1/2 cup onion, chopped
- 1-2 tbsp butter
- Juice of 1 lemon
- 1/2 tsp salt
- 2 tbsp fresh parsley
- 1/2 tsp dried thyme
- 1/3 tsp paprika
- Place the onion in the cavity of the chicken and rub the skin with butter. Place in slow cooker.
- Squeeze lemon juice over chicken and sprinkle with remaining seasonings. Cover and cook on low 8-10 hours or high 4-5 hours.
