Words are more explicit (so may be better) and used in many rule sets (e.g. Cheapass Games) so we may not want to add icons...
Examples of icons:
Nestorgames seems to use: three people icon (number of people), two gears (complexity level), clock (time to play)
Looney Pyramids seems to use: person icon (number of people), four-pointed star (complexity level), clock (time to play)---older rules often just use words
Other Looney games seems to use: two hands or (empty) table (number of people), small person/big person (age), clock (time to play)
Green Box of Games seems to use: three people icon (number of people), person with question mark (complexity), clock (time to play)
Decktet uses: two people at a table (number of people)
Mint Control uses: two people at a table (number of people), stopwatch (time to play), small/big person (age)

Necromancer Games (i.e. Heresy of Rot in Kobold and Friends HB) has a table of a few options (i.e. "Party Size" for number of players) and "Difficulty to Run" and highlights the options relevant for the campaign.
