Currently QueryableTypes class contains a hardcoded list of fields which can be queried. It would be quite helpful to have these defined in a user defined config file.

This doesn't appear to me as though it's a duplicate of stac-utils/stac-fastapi#58. While stac-utils/stac-fastapi#58 resolves the issue of users being able to define queryables it doesn't allow users to specify these queryables by way of a config file or to (ideally) configure the application to support different queryables per collection
