Under the Creative Works categories, these should be sorted by start date in Date/Time Interval field.

This was an oversight on where the sorting occurs. The sorting is done on the front end and requires being the JSON value path. In this case
dateTimeIntervalStart should be dateTimeInterval.start for all the creative works types.
