Questions are answered as below:

1.1 Should payment be real or dummy? (1.1.8)

Payments are planned as dummy transactions.

1.2 Is EFT necessary? Which payment methods must be implemented? (1.1.8)

Credit/Debit card is a must for payment and features of MasterCard, Visa and American Express are must for payment method. EFT is a nice to have.

1.3 Should we implement a recommendation system or can we use an existing library? (1.1.11)

It's a design choice, both of the two approach are acceptable.

1.4 Should the guests be able to comment on a product they bought? (1.2.5.2)

Yes, it can be implemented as a different page for guests.

1.5 How much Google Maps integration is needed? (1.2.8)

Complete integration is requested and requiring a complete direction from users' current location should be provided accurately.

1.6 How should the recommendation system work? Based on search or purchase history? (1.2.9)

It is a merge of both histories, with a percentage recommended as 50% each.

1.7 How should we store payments information?

Since the payment is planned as dummy transactions, the credit cards should have mock numbers thus storing them without hashing for educational purposes are legit and it is stated in GDPR.
